Recipes from the Spring's Sweet Kitchen
The cooks at the Spring's Sweet Kitchen are always thinking of new ways to
cook, bake and brew with honey. Try the recipes below to see if you agree with
them that honey adds a special quality. Along with its fragrance and smooth taste,
honey adds moisture so baked goods stay fresher, longer.
Since honey is perceptibly sweeter to the taste buds than sugar, you can adapt
your favorite recipes by substituting 3/4 cup to 1 cup (depending on the recipe) of honey for 1 1/2 cups of sugar.

Honey Blondies
(recipe from National Honey Board)
Tip: Use our Risqué Raspberry Honey to make Honey Redheads!
| 1 cup |
honey |
| 3/4 cup |
butter or margarine, softened |
| 1 |
egg |
| 1 tsp |
vanilla extract |
| 2 cups |
all-purpose flour |
| 1/2 tsp |
baking powder |
| 1/2 cup |
semi-sweet chocolate chips |
| 1/2 cup |
chopped toasted pecans |
| In medium bowl, cream honey and butter until light and fluffy.
Beat in egg and vanilla. Add flour and baking powder; mix until combined. Fold
in chocolate chips and pecans. Spread batter into greased 9x9-inch square baking
dish. Bake at 350 degrees F for 40 minutes or until wooden pick inserted near
center comes out clean. Allow to cool completely. Cut into squares. |
Honey Barbecue
Wings
Tip: Try it with our Passionate Pineapple Honey!

honey |
| 1/3 cup |
rice wine vinegar |
| 1/3 cup |
tropical fruit juice (such as pineapple, mango, papaya, passionfruit,
etc.) |
| 1/2 tsp |
garlic powder |
| 1/2 tsp |
bottled hot pepper sauce (or more, to taste) |
| 1 1/2 lbs |
chicken wings
Garlic powder
Onion powder |
| Sprinkle the chicken wings with garlic powder and onion powder
to taste. Bake the wings at 400 degrees until browned and juices run clear.
Combine honey, vinegar, juice and seasonings in small saucepan; mix well.
Cook and stir until mixture begins to thicken. Pour over chicken wings in baking
dish. Bake at 350 degrees for 12 to 15 minutes or until wings are glazed with
sauce.

Pacific Rim Honey
Barbecued Fish
(recipe from National Honey Board)
| 1/4 cup |
honey |
| 1/4 cup |
chopped onion |
| 2 T. |
each lime juice, soy sauce and hoisin sauce |
| 2 cloves |
garlic, minced |
| 1 |
jalapeño pepper, seeded and minced |
| 1 tsp |
minced fresh ginger root |
| 1 lb. |
swordfish steaks |
| Combine all ingredients except fish; mix well. Marinate fish in
honey mixture at least 1 hour in refrigerator. Barbecue or broil fish, allowing
10 minutes per inch of thickness, or until fish flakes when tested with a fork.
Makes 4 servings. |
Honeyed Fruit
and Nut Spread

Tip: Instead of chopped apricots, use one of our fruited honeys!

honey |
| 6 T. |
dried apricots, finely chopped |
| 6 T |
walnuts, finely chopped |
| Beat together cream cheese and honey. Add apricots and walnuts
and combine thoroughly. Spread on muffins, biscuits, English muffins, bagels,
toast or quick breads. |
